High Protein Monkey Bread

NOTE: this is for a small batch. Feel free to double or triple the recipe.


Ingredients 

Dough

  • 1.25 cups flour

  • 1 cup blended cottage cheese

  • 2 tablespoons maple syrup

  • 1.5 teaspoons baking powder


Other ingredients

  • 1/4 cup sugar

  • 1/2 tablespoon cinnamon

  • 1/4 cup melted butter

  • 1/4 cup brown sugar

  • 1 tablespoon protein powder


Frosting

  • 2 tablespoons of cream cheese, softened

  • ¼ cup blended cottage cheese

  • 1 tablespoon maple syrup


Instructions 

  • Preheat the oven to 350ºF


  • Make the dough: add the flour, blended cottage cheese, maple syrup, and baking powder to a bowl and mix to combine. Once combined, knead the dough into a ball. You’ll know the dough is ready if you poke the dough and it bounces right back.


  • Cut dough into 1/4 pieces and toss into a large zipper bag


  • Mix together sugar and cinnamon. Toss into bag with the dough pieces and shake until evenly coated.


  • Pour into a sprayed bundt pan.


  • Mix together melted butter,  brown sugar, and protein powder. Pour over dough.


  • Bake at 350 for 20 minutes. If you double the recipe you may need to cook it longer.


  • Make the frosting: While the monkey bread is baking, add all the ingredients to a bowl and use an electric mixer to mix the ingredients together. Be sure the cream cheese is softened or you will end up with lumpy frosting.


  • Flip over bundt pan, let cool before drizzling on frosting
