NOTE: this is for a small batch. Feel free to double or triple the recipe.
Ingredients
Dough
1.25 cups flour
1 cup blended cottage cheese
2 tablespoons maple syrup
1.5 teaspoons baking powder
Other ingredients
1/4 cup sugar
1/2 tablespoon cinnamon
1/4 cup melted butter
1/4 cup brown sugar
1 tablespoon protein powder
Frosting
2 tablespoons of cream cheese, softened
¼ cup blended cottage cheese
1 tablespoon maple syrup
Instructions
Preheat the oven to 350ºF
Make the dough: add the flour, blended cottage cheese, maple syrup, and baking powder to a bowl and mix to combine. Once combined, knead the dough into a ball. You’ll know the dough is ready if you poke the dough and it bounces right back.
Cut dough into 1/4 pieces and toss into a large zipper bag
Mix together sugar and cinnamon. Toss into bag with the dough pieces and shake until evenly coated.
Pour into a sprayed bundt pan.
Mix together melted butter, brown sugar, and protein powder. Pour over dough.
Bake at 350 for 20 minutes. If you double the recipe you may need to cook it longer.
Make the frosting: While the monkey bread is baking, add all the ingredients to a bowl and use an electric mixer to mix the ingredients together. Be sure the cream cheese is softened or you will end up with lumpy frosting.
Flip over bundt pan, let cool before drizzling on frosting
